- 3-5 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- ¼ cup brown sugar (or honey)
- ¼-½ cup reduced-sodium soy sauce
- 1-2 tsp sesame oil
- 1 tsp red pepper flakes or gochujang (for heat)
- 2-3 green onions, sliced
- 1 tbsp rice vinegar (optional)
- 4 cups cooked rice (white, brown, or cauliflower rice)
- Sesame seeds & sliced cucumbers for garnish
Brown the beef: In a skillet, cook ground beef with garlic and ginger over medium-high heat until no longer pink. Drain excess fat.Make the sauce: Whisk soy sauce, brown sugar, sesame oil, red pepper flakes, and rice vinegar. Pour over beef and simmer for 2–3 minutes.Add greens: Stir in green onions (reserve some for garnish).Serve: Spoon beef over rice, garnish with sesame seeds, cucumbers, and extra green onions.
