Ingredients
  

  • 113 g unsalted butter, softened
  • 1 large egg
  • 113 g sugar
  • 57 g light brown sugar
  • 1 tsp vanilla extract
  • 2-3 tsp key lime zest
  • 227 g flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup powdered sugar
  • 1 tbsp key lime juice
  • 1 tbsp milk
  • 1/4 tsp vanilla
  • A pinch of salt (optional)
  • 1/2 tsp key lime zest

Instructions
 

  • 1.Whisk Dry Ingredients: Combine flour, baking powder, and salt.
    2.Cream Butter/Sugar: Beat butter and sugar until fluffy. Add egg, zest, and juice.
    3.Combine: Gradually mix in dry ingredients.
    4.Chill: Refrigerate dough 1 hour.
    5.Bake: Scoop 1-tbsp balls onto sheets. Bake at 350°F (175°C) for 8-10 mins.
    6.Glaze: Mix glaze ingredients, drizzle over cooled cookies.

Notes

  • Regular limes work if key limes are unavailable
  • Dough can be frozen for up to 1 month
  • For stronger lime flavor, add ½ tsp lime extract
