Keto Mashed Cauliflower

A creamy, low-carb alternative to mashed potatoes, made with cauliflower, butter, cream cheese, and garlic for a rich and satisfying side dish.

Ingredients
  

  • 1 large head of cauliflower
  • 2 tablespoons butter
  • 2 ounces cream cheese, softened
  • 1/4 cup grated parmesan cheese
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Steam cauliflower: Cook florets in a steamer basket for 10-12 minutes until very soft.
    Sauté garlic: Melt butter in a pan, add garlic, and cook until fragrant (~30 seconds).
    Blend: Transfer cauliflower, garlic butter, cream cheese, salt, and pepper to a food processor. Blend until smooth.
    Adjust seasoning: Taste and add more salt or cheese if needed.
    Serve: Garnish with chives, extra butter, or cheese.

Notes

  • For extra creaminess, use full-fat cream cheese and butter.
  • Avoid over-blending to prevent a gummy texture.
  • Store leftovers in an airtight container for 3-5 days .
