Ingredients
  

  • 3 cups almond flour
  • 2/3 cups granulated sugar substitute (erythritol or monk fruit)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 3/4 cup butter, softened
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 5 ounces sugar-free chocolate chips

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
    Mix dry ingredients: In a bowl, combine almond flour, sugar substitute, baking soda, and salt.
    Cream butter and sweetener until fluffy. Add eggs one at a time, then vanilla.
    Combine wet and dry ingredients, then fold in chocolate chips.
    Scoop dough onto baking sheet (1 tbsp per cookie) and bake for 10–12 minutes until edges are golden.
    Cool on tray for 5 minutes before transferring to a wire rack.

Notes

  • For chewier cookies, add 1 extra egg yolk.
  • Store in an airtight container for up to 1 week, or freeze for 3 months.
  • Substitute chocolate chips with nuts or coconut flakes for variety.
