Ingredients
  

For the Chicken

  • 1 whole chicken (4-5 lbs), giblets removed
  • 2 tbsp olive oil or melted butter
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried thyme or rosemary

For the Stuffing (optional)

  • 1 lemon, halved
  • 1 onion, quartered
  • 4 garlic cloves
  • Fresh rosemary or thyme sprigs

For the Pan

  • 1 cup chicken broth or water
  • 2 carrots, peeled and cut into chunks
  • 2 celery stalks, cut into chunks
  • 1 onion, quartered

Instructions
 

  • Step 1: Prep the Chicken
    Preheat your oven to 425°F (220°C).
    Pat the chicken dry with paper towels to ensure crispy skin
  • Step 2: Season
    Rub the chicken all over with olive oil or butter, including under the skin for extra flavor.
    Mix salt, pepper, garlic powder, paprika, and thyme in a small bowl. Sprinkle generously over the chicken.
  • Step 3: Stuff (Optional)
    Stuff the cavity with lemon halves, onion, garlic cloves, and fresh herbs.
  • Step 4: Arrange the Pan
    Place the chopped vegetables in a roasting pan. Pour in the chicken broth or water. Position the chicken breast-side up on top of the vegetables.
  • Step 5: Roast
    Roast the chicken in the preheated oven for 20 minutes. Lower the temperature to 375°F (190°C) and continue roasting for 1-1.5 hours, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh.
  • Step 6: Rest and Serve
    Remove the chicken from the oven and let it rest for 15 minutes before carving. This helps the juices redistribute for maximum tenderness.

Notes

  • For extra crispy skin, turn the broiler on for the last 5 minutes of cooking.
  • Always use a meat thermometer to ensure accurate cooking.
