Ingredients
  

  • 2 po red potatoes, unpeeled
  • 6 slices bacon, diced
  • 1 small onion, finely chopped
  • ¼ cup apple cider vinegar
  • 2 tbsp granulated sugar
  • 1 tbsp Dijon mustard
  • cup chicken broth
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped

Instructions
 

  • Step 1: Cook the Potatoes
    Boil the potatoes in a large pot of salted water until fork-tender, about 15-20 minutes. Drain and let them cool slightly. Slice into bite-sized pieces.
  • Step 2: Cook the Bacon
    In a large skillet over medium heat, cook the diced bacon until crispy. Remove the bacon with a slotted spoon and set aside, leaving the drippings in the skillet.
  • Step 3: Prepare the Dressing
    Add the chopped onion to the skillet with the bacon drippings. Cook over medium heat until softened, about 3 minutes. Stir in the apple cider vinegar, sugar, Dijon mustard, and chicken broth. Cook for 2-3 minutes, stirring to combine.
  • Step 4: Combine Ingredients
    Add the sliced potatoes to the skillet and gently toss to coat in the warm dressing. Stir in the crispy bacon and chopped parsley.
  • Step 5: Serve Warm
    Season with salt and pepper to taste. Serve immediately while warm.

Notes

  • For added flavor, sprinkle the salad with a pinch of smoked paprika before serving.
  • If you prefer a slightly sweeter salad, increase the sugar to 3 tablespoons.
