Ingredients
  

  • 2 medium zucchinis
  • 1 medium onion
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • 1.Prep Zucchini: Cut zucchini into even ½" thick slices.
    2.Sauté: Heat oil and butter in large skillet over medium-high heat. Add zucchini in single layer.
    3.Cook: Sear 3-4 minutes per side until golden brown.
    4.Season: Add garlic, soy sauce, and mirin. Toss to coat (1 minute).
    5.Finish: Drizzle with sesame oil and remove from heat.
    6.Garnish: Sprinkle with sesame seeds and green onions.

Notes

  • Don't overcrowd pan - cook in batches if needed
  • For spice, add ¼ tsp red pepper flakes
  • Substitute honey for mirin if unavailable
