Ingredients
  

  • 6 large eggs
  • ½ cup whole milk or cream
  • 1 cup heirloom tomatoes, sliced
  • ¼ cup fresh basil, chopped
  • ½ cup shredded mozzarella or feta cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes (optional)

Instructions
 

  • Preheat oven to 375°F (190°C).
    In a bowl, whisk eggs, milk, salt, and pepper. Set aside.
    Heat olive oil in an oven-safe skillet over medium heat. Sauté onion and garlic until soft (3–4 mins).
    Add tomatoes and basil, cooking for 2 more minutes.
    Pour egg mixture over veggies, stirring gently. Sprinkle cheese on top.
    Cook on stovetop for 3–4 mins until edges set, then transfer to oven.
    Bake for 12–15 mins until eggs are fully set and slightly golden.
    Let cool 5 mins before slicing.

Notes

  • Substitute cherry tomatoes if heirlooms aren’t available.
  • Add spinach or mushrooms for extra veggies.
