Ingredients
  

  • 2 lbs ground beef (80/20 blend)
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 2 (15oz) cans kidney beans, drained
  • 1 (28oz) can crushed tomatoes
  • 1 (6oz) can tomato paste
  • 2 cups beef broth
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 1/2 tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, green onions

Instructions
 

  • Brown beef in large pot over medium-high heat, breaking into crumbles (5-7 mins)
    Add onions and garlic, cook until soft (3-4 mins)
    Stir in all spices and cook until fragrant (1 min)
    Add remaining ingredients (beans, tomatoes, broth) and bring to boil
    Reduce heat to low, simmer uncovered for 1-1.5 hours, stirring occasionally
    Adjust seasoning with salt/pepper to taste
    Serve hot with desired toppings

Notes

  • For thicker chili: Simmer longer or add 1/4 cup masa harina
  • For spicier version: Add diced jalapeƱos or extra cayenne
  • Slow cooker option: Cook on low 6-8 hours after browning meat
