  • 2 medium zucchini, sliced Look for glossy skin and firm texture.
  • 1 each bell pepper, sliced Red, yellow, or green—choose your favorite.
  • 3 cloves garlic, minced Fresh is best for aroma.
  • 2 tablespoons soy sauce Use low-sodium for a healthier option.
  • 1 tablespoon olive oil Extra virgin for best flavor.
  • to taste salt and pepper Start with less; adjust as needed.

Preparation

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat until water sizzles in the pan.
  • Add 3 minced garlic cloves and sauté for about 30 seconds until fragrant, being careful not to burn them.
  • Add 1 pound of ground beef to the pan. Cook until browned, about 5-7 minutes, breaking it up with a spatula.
  • Toss in the sliced zucchini and bell pepper. Sauté for 5-7 minutes until tender but still crisp.
  • Stir in 2 tablespoons of soy sauce and season with salt and pepper. Mix well and cook for another 1-2 minutes.
  • Serve hot over rice or on its own.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Can be frozen for up to 3 months. Feel free to chop veggies ahead for quicker cooking.
