Ingredients
  

  • 1 ham bone with leftover meat
  • 4 cups diced potatoes
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 1 cup heavy cream or milk (optional)
  • 2 tbsp butter
  • 1 tbsp thyme (dried or fresh)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • In a large pot, melt butter over medium heat. Add onions, carrots, celery, and garlic. Sauté until softened (about 5-7 minutes).
    Add the ham bone, potatoes, thyme, and broth to the pot. Bring to a boil, then reduce heat to low and simmer for 1.5-2 hours, or until the potatoes are tender and the ham bone has infused the broth with flavor.
    Remove the ham bone from the pot. Shred any remaining meat and return it to the soup.
    Stir in heavy cream or milk (if using) and season with salt and pepper to taste.
    Serve hot, garnished with fresh parsley.

Notes

  • For a thicker soup, mash some of the potatoes before adding the cream.
  • Substitute heavy cream with coconut milk for a dairy-free option.
