- 12 large sea scallops (about 1 lb)
- 2 medium zucchinis, sliced lengthwise
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp chopped fresh parsley
Pat scallops dry and remove side muscle. Toss zucchini and scallops with olive oil, garlic, lemon juice/zest, salt, and pepper.Heat grill or grill pan to medium-high.Grill zucchini 3-4 minutes per side until tender.Grill scallops 2-3 minutes per side until opaque and lightly charred.Garnish with parsley and serve immediately.
