Ingredients
  

  • 12 large sea scallops (about 1 lb)
  • 2 medium zucchinis, sliced lengthwise
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp chopped fresh parsley

Instructions
 

  • Pat scallops dry and remove side muscle. Toss zucchini and scallops with olive oil, garlic, lemon juice/zest, salt, and pepper.
    Heat grill or grill pan to medium-high.
    Grill zucchini 3-4 minutes per side until tender.
    Grill scallops 2-3 minutes per side until opaque and lightly charred.
    Garnish with parsley and serve immediately.

Notes

  • For best results, use "dry" scallops (not treated with preservatives).
  • Don't overcrowd the grill to ensure proper searing.
