- 4 Mahi Mahi fillets (about 6 oz each)
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 1 lemon (zested and juiced)
- 1 tsp smoked paprika
- 1 tsp dried oregano
- ½ tsp salt
- ½ tsp black pepper
- Fresh parsley or cilantro for garnish
In a small bowl, whisk together olive oil, garlic, lemon zest, lemon juice, smoked paprika, oregano, salt, and pepper to create the marinade.Place the Mahi Mahi fillets in a shallow dish and pour the marinade over them. Let them marinate for 10-15 minutes.Preheat the grill to medium-high heat (about 400°F or 200°C). Lightly oil the grates to prevent sticking.Place the fillets on the grill and cook for 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork.Remove from the grill and garnish with fresh parsley or cilantro. Serve immediately with lemon wedges.
