Ingredients
  

  • lbs chicken breast or thighs, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 3 tbsp lemon juice
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Wooden or metal skewers
  • ½ tsp paprika
  • 1 tsp red wine vinegar

Instructions
 

  • Prepare the Marinade
    In a bowl, whisk together olive oil, lemon juice, garlic, red wine vinegar, oregano, thyme, paprika, salt, and pepper.
  • Marinate the Chicken
    Place the chicken pieces in a large zip-top bag or a bowl. Pour the marinade over the chicken, ensuring every piece is coated. Refrigerate for at least 30 minutes, or up to 24 hours for maximum flavor.
  • Assemble the Skewers
    If using wooden skewers, soak them in water for 20 minutes to prevent burning. Thread the marinated chicken pieces onto the skewers.
  • Grill the Chicken
    Preheat your grill or grill pan to medium-high heat. Cook the skewers for 8-10 minutes, turning occasionally, until the chicken is fully cooked and has a light char.
  • Serve and Enjoy
    Serve hot with warm pita bread, fresh salad, and a generous dollop of tzatziki sauce.

Notes

For an authentic Greek experience, serve this souvlaki with tzatziki sauce and a side of Greek salad. You can substitute chicken with pork or lamb for a different protein.
