Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • ¼ tsp salt

Wet Ingredients

  • 1 cup milk
  • 1 egg
  • 2 tbsp melted butter (plus extra for the skillet)
  • 1 tsp vanilla extract (optional)

Instructions
 

  • Step 1: Prepare the Batter
    In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
    In a separate bowl, beat the egg, then mix in the milk, melted butter, and vanilla extract if using
    .Gradually add the wet ingredients to the dry ingredients, stirring until just combined. A few lumps are okay—overmixing can make the pancakes tough.
  • Step 2: Heat the Skillet
    Heat a non-stick skillet or griddle over medium heat. Add a small pat of butter and swirl it around to coat the surface evenly.
  • Step 3: Cook the Pancakes
    Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2 minutes. Flip carefully and cook for another 1-2 minutes until golden brown.
  • Step 4: Serve
    Transfer pancakes to a plate and keep warm. Repeat with the remaining batter, adding more butter to the skillet as needed.

Notes

  • For thicker pancakes, reduce the milk slightly.
  • To keep pancakes warm, place them on a baking sheet in a 200°F oven while you cook the rest.
