Ingredients
  

  • 6 cups mixed vegetables (broccoli, cauliflower, carrots, zucchini)
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • ½ cup grated Parmesan
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp chopped fresh parsley

Instructions
 

  • Preheat oven to 425°F (220°C).
    Toss vegetables with oil, garlic, and seasonings (except Parmesan).
    Spread on baking sheet. Roast 20 minutes.
    Sprinkle with Parmesan, roast 5 more minutes.
    Garnish with parsley before serving.
