Ingredients
  

  • 8 large flour tortillas
  • 8 large eggs
  • ¼ cup milk
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup cooked and crumbled sausage or bacon
  • ½ cup diced bell peppers
  • ½ cup diced onions
  • Olive oil for sautéing

Instructions
 

  • Prepare the protein: Cook sausage or bacon until fully cooked and crispy. Drain excess grease and set aside.
    Sauté vegetables: In a skillet, heat olive oil and sauté diced bell peppers and onions until soft. Remove from heat.
    Scramble the eggs: In a bowl, whisk eggs with milk, salt, and pepper. Cook in a nonstick pan over medium heat until just set.
    Assemble burritos: Lay each tortilla flat. Add scrambled eggs, cooked sausage or bacon, sautéed vegetables, and shredded cheese to the center of each tortilla.
    Wrap and secure: Fold the sides of the tortilla inward, then roll tightly from the bottom to the top. Wrap each burrito in aluminum foil or parchment paper.
    Freeze: Place wrapped burritos in a freezer-safe bag and store in the freezer for up to 3 months.
    Reheat: To serve, remove foil or parchment and microwave for 2-3 minutes or bake at 350°F (175°C) for 15-20 minutes until heated through.

  • For a vegetarian option, replace meat with black beans or tofu.
