Ingredients
  

  • 2 Filet Mignon steaks (6-8 ounces each)
  • 1 tbsp olive oil
  • Salt and black pepper (to taste)
  • 2 tbsp unsalted butter (divided)
  • 2 shallots (minced)
  • 2 garlic cloves (minced)
  • 1 cup dry red wine (e.g., Cabernet Sauvignon)
  • 1 cup beef broth
  • 2 sprigs fresh thyme
  • 1 tbsp fresh parsley (chopped, for garnish)

Instructions
 

  • Prep the Steaks: Let the Filet Mignon steaks sit at room temperature for 30 minutes. Pat them dry and season generously with salt and pepper.
    Sear the Steaks: Heat olive oil in a skillet over medium-high heat. Sear the steaks for 3-4 minutes per side until a golden-brown crust forms. Remove and set aside.
    Make the Sauce: In the same skillet, add 1 tablespoon of butter. Sauté shallots and garlic until fragrant. Pour in the red wine and beef broth, scraping up any browned bits. Add thyme and let the sauce reduce by half (about 10 minutes).
    Finish the Sauce: Stir in the remaining butter until melted and the sauce is glossy.
    Serve: Plate the steaks, drizzle with the Red Wine Sauce, and garnish with fresh parsley.

Notes

  • Let the steaks rest for 5-10 minutes before serving to retain their juices.
  • For a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of water and stir into the sauce during reduction.
