Ingredients
  

  • 1 sheet puff pastry (thawed)
  • ¼ cup fig jam (or preserves)
  • 4 oz goat cheese, softened
  • 1 tbsp honey
  • 1 tsp fresh thyme leaves (or rosemary)
  • 1 egg (for egg wash, optional)

Instructions
 

  • Prep Pastry: Roll out puff pastry into a 10x12-inch rectangle.
    Spread Fillings: Evenly layer fig jam, then crumbled goat cheese, honey, and thyme.
    Roll & Chill: Tightly roll into a log, wrap in plastic, and chill 10 mins (optional for cleaner slices).
    Slice & Bake: Cut into ½-inch pinwheels, place on parchment-lined tray. Brush with egg wash (optional). Bake at 400°F (200°C) for 12-15 mins until golden.

  • For a crispier texture, chill the rolled log for 30 mins before slicing.
