Ingredients

  • 3 cups whole milk
  • ½ cup granulated sugar
  • cup all-purpose flour
  • 3 large egg yolks
  • 2 tsp vanilla extract
  • 11 oz vanilla wafers
  • 5 ripe bananas, sliced
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar

Instructions

  • Prepare the Custard: In a medium saucepan, whisk together milk, sugar, and flour over medium heat. Cook until the mixture begins to thicken.
Add Egg Yolks: Temper the egg yolks by adding a small amount of the hot custard mixture. Gradually whisk this back into the saucepan and cook for another 2 minutes, stirring constantly. Remove from heat and stir in vanilla extract. Allow it to cool slightly.
Layer the Pudding: In a trifle dish or a 9x13 baking dish, layer vanilla wafers, banana slices, and custard. Repeat the layers, ending with a custard layer on top.
Whip the Cream: In a mixing bowl, beat heavy whipping cream with powdered sugar until stiff peaks form. Spread or pipe the whipped cream over the pudding.
Chill and Serve: Cover the dish and refrigerate for at least 4 hours, preferably overnight. Serve chilled.

Notes

  • For a more intense banana flavor, use overripe bananas.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
