Meat and Seasoning

  • 1 lb ground beef or turkey Choose lean for a healthier option.
  • 1 packet taco seasoning mix (about 2 tbsp) Look for brands like Old El Paso for a classic flavor.
  • 1/4 cup water Helps create that luscious taco meat sauce.

Main Ingredients

  • 9 pieces lasagna noodles (boiled and drained) or soft flour tortillas Tortillas save time and give it a unique twist.
  • 1 cup refried beans Check out brands like Rosarita for a creamy consistency.
  • 2 cups shredded Mexican cheese blend or cheddar cheese A blend is preferred for varied flavors.
  • 1 cup tomato sauce or salsa Go with your favorite chunky salsa for extra kick.
  • 1/2 cup chopped onions Sweet onions work great for a mellow flavor.
  • 2 cloves garlic, minced Fresh garlic elevates the dish.
  • optional sliced jalapeños Adds a spicy touch.

Toppings

Instructions
 

Preparation

  • In a large skillet over medium heat, brown your ground beef or turkey (about 5-7 minutes) until fully cooked, breaking it apart. Drain any excess fat.
  • Stir in the taco seasoning mix and 1/4 cup water. Simmer for an additional 5-10 minutes until the sauce thickens and the meat is well coated.
  • If using lasagna noodles, boil according to package instructions until al dente (about 8-10 minutes). Drain and set aside. If using tortillas, skip this step.

Layering and Baking

  • Preheat your oven to 350°F (175°C). Spread a spoonful of tomato sauce or salsa on the bottom of a baking dish to prevent sticking.
  • Begin layering your noodles/tortillas, then add a layer of seasoned meat, followed by refried beans, a sprinkle of cheese, and some chopped onions and garlic. Repeat until all ingredients are used, finishing with a generous layer of cheese on top.
  • Cover the dish with foil and bake for 25 minutes in the preheated oven. Remove the foil and bake for an additional 10 minutes.
  • Allow the lasagna to cool for 5-10 minutes before slicing to let the layers set beautifully.

Notes

Leftovers can be covered tightly with foil or stored in an airtight container in the fridge for up to 4 days. You can assemble it a day before and bake it just before serving.
