  • 4 ounces feta cheese, crumbled Aged feta adds a creamy tang—opt for high-quality cheese for the best flavor.

  • Salt To taste; seasoning enhances all the flavors!

Preparation

  • Bring a large pot of salted water to a rolling boil. Carefully drop the gnocchi into the water and cook according to package instructions, typically for about 2-3 minutes until they float to the surface. Use a slotted spoon to fish them out and set aside.
  • In a large frying pan, heat the olive oil over medium-high heat. Once hot and shimmering, toss in the cooked gnocchi. Let them sizzle undisturbed for about 2-3 minutes until they form a golden-brown crust on one side.
  • Gently stir the gnocchi, ensuring they crisp up on all sides for another 2-3 minutes.
  • Reduce the heat to medium and add the minced garlic to the pan. Sauté for about 1 minute until fragrant, being careful not to let it burn.
  • Toss in the fresh spinach and stir gently until it wilts, which will take about 2-3 minutes.
  • Season with salt, black pepper, and red pepper flakes if desired. Remove from heat and fold in the crumbled feta cheese, letting it combine with the warm mixture. Serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to 2-3 days. Make the gnocchi a day prior but crisp before serving for the best texture.
