Ingredients
  

  • 4 large green tomatoes sliced ¼-inch thick
  • ½ cups all-purpose flour
  • ½ cups cornmeal
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 large eggs beaten
  • Vegetable oil for frying

Instructions
 

  • Step 1: Prepare the Tomatoes
    Slice the green tomatoes into ¼-inch thick rounds. Pat them dry with paper towels to remove excess moisture.
  • Step 2: Set Up the Breading Station
    Place the flour, beaten eggs, and a mixture of cornmeal, breadcrumbs, and seasonings in three separate shallow bowls.
  • Step 3: Bread the Tomatoes
    Dip each tomato slice into the flour, then the beaten eggs, and finally coat it with the cornmeal mixture. Press gently to ensure an even coating.
  • Step 4: Heat the Oil
    Heat vegetable oil in a skillet over medium heat until it reaches 350°F (175°C). You can test the oil by dropping a small pinch of breading into it; if it sizzles, it’s ready.
  • Step 5: Fry the Tomatoes
    Fry the breaded tomato slices in batches, being careful not to overcrowd the skillet. Cook for 2-3 minutes on each side until golden brown.
  • Step 6: Drain and Serve
    Remove the tomatoes from the skillet and place them on a plate lined with paper towels to drain excess oil. Serve immediately and enjoy!

Notes

  • For an extra kick, add a dash of cayenne pepper to the breading mixture.
  • Serve with a creamy dipping sauce like ranch or remoulade for added flavor.
