Ingredients
  

  • 2 cups cherry tomatoes, halved
  • 1 cup (150g) feta cheese, crumbled
  • ¼ cup Greek yogurt
  • 2 tbsp extra-virgin olive oil
  • 1 garlic clove, minced
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes (optional)
  • Salt & black pepper to taste
  • Fresh basil or parsley for garnish

Instructions
 

  • Roast Tomatoes: Preheat oven to 400°F (200°C). Toss tomatoes with 1 tbsp olive oil, salt, and pepper. Roast for 15-20 mins until softened.
    Blend Ingredients: In a food processor, combine roasted tomatoes, feta, Greek yogurt, garlic, oregano, and remaining olive oil. Pulse until smooth but slightly chunky.
    Season & Serve: Adjust salt/pepper to taste. Transfer to a bowl, drizzle with olive oil, and garnish with fresh herbs. Serve warm or chilled.

Notes

  • For a smoother texture, blend longer. For chunkier, pulse briefly.
  • Can be made ahead and refrigerated for up to 3 days.
  • Substitute sun-dried tomatoes for a richer flavor.
