Ingredients
  

  • 1 lb (450g) Italian sausage (mild or hot)
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 (17.5 oz) package potato gnocchi
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • Salt and pepper to taste

Instructions
 

  • Brown sausage in a large pot over medium heat, breaking into crumbles (5-6 mins).
    Add onion and garlic; sauté until softened (2-3 mins).
    Pour in chicken broth and bring to a boil.
    Add gnocchi and cook until they float (3-4 mins).
    Reduce heat to low; stir in spinach, cream, Parmesan, and seasonings.
    Simmer 5 mins until slightly thickened (don't boil).
    Adjust seasoning and serve with extra Parmesan.

Notes

  • Substitutions: Use turkey sausage for lighter version, or kale instead of spinach.
  • Storage: Best fresh; cream may separate when reheated (add splash of broth).
  • Gluten-Free: Use GF gnocchi and check sausage ingredients.
