Ingredients
  

  • 1 lb Italian sausage (mild or spicy)
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 package (9 oz) cheese tortellini
  • 2 cups fresh spinach (optional)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish

Instructions
 

  • In a large pot or Dutch oven, heat olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it into small pieces with a spoon.
    Add the diced onion and garlic to the pot, sautéing until softened and fragrant (about 3-4 minutes).
    Stir in the diced tomatoes, chicken broth, basil, oregano, salt, and pepper. Bring the mixture to a simmer.
    Add the tortellini and cook according to package instructions (usually 7-10 minutes) until tender.
    Reduce the heat to low and stir in the heavy cream. If using spinach, add it now and let it wilt.
    Taste and adjust seasoning if needed. Serve hot, garnished with grated Parmesan cheese.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or whole milk.
  • Add a pinch of red pepper flakes for a spicy kick.
  • Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop.
