Creamy Mushroom Pork Chops

Ingredients
  

  • 3 cups water (or more to cover the meat)
  • 2 tablespoons salt
  • 2 teaspoons sugar
  • 1 tablespoon peppercorns
  • 2 crushed garlic cloves (optional)
  • 2 - 2 1/2 pounds pork chops with bone (3-4), 1 - 1 1/2 inches thick
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt (use less if you want it less salty)
  • 2 tablespoons butter
  • 1 can cream of mushroom soup (10.75 oz)
  • 1/2 cup cream
  • 1/2 teaspoon thyme
  • 2-3 garlic cloves
  • 1/2 teaspoon pepper
  • 8 oz sliced mushrooms

Instructions
 

  • 1.Season pork chops with salt and pepper.
    2.Heat olive oil in a skillet over medium-high heat. Sear pork chops for 4-5 minutes per side until golden. Remove and set aside.
    3.In the same skillet, melt butter and sauté mushrooms and onions until softened (~5 min).
    4.Add garlic and cook for 1 minute until fragrant.
    5.Pour in chicken broth, scraping up browned bits. Stir in heavy cream, Dijon mustard, and thyme.
    6.Return pork chops to the skillet and simmer for 5-7 minutes until cooked through and sauce thickens.
    7.Garnish with fresh parsley before serving.
