Ingredients
  

  • 2 tablespoons olive oil
  • 1 lb chicken breast, sliced
  • Salt and pepper, to taste
  • 3 garlic cloves, minced
  • 2 tablespoons lime juice, freshly squeezed
  • 1/4 cup chicken broth
  • 1 tablespoon cilantro, fresh, chopped
  • 2/3 cups heavy cream
  • 2/3 cups milk
  • 1/2 cup Parmesan cheese, shredded
  • 8 oz spaghetti
  • 1/4 cup reserved cooked pasta water
  • 1 teaspoon fresh cilantro, chopped
  • 8 strips bacon, cooked, drained of fat, and chopped

Instructions
 

  • Preheat oven to 350°F (175°C). Cook spaghetti according to package directions.
    In large bowl, mix soups, sour cream, milk, 1½ cups cheese, and seasonings.
    Add cooked spaghetti and chicken to sauce mixture, stirring to combine.
    Transfer to greased 9x13 baking dish. Top with remaining cheese.
    Optional topping: Mix breadcrumbs with melted butter, sprinkle over cheese.
    Bake 25-30 minutes until bubbly and golden brown.

Notes

  • For lighter version: use low-fat soups and reduced-fat cheese
  • Add vegetables like mushrooms or spinach for extra nutrition
  • Can be prepared ahead and refrigerated before baking
  • Freezes well for up to 3 months
