Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 po chicken breast, cooked and shredded
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup milk (whole or 2%)
  • 1 tsp dried thyme
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1 po gnocchi
  • 2 cups fresh spinach, chopped
  • ½ cup grated Parmesan cheese

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté for 5 minutes until vegetables are softened.
  • Stir in shredded chicken, chicken broth, heavy cream, and milk. Add thyme, Italian seasoning, salt, and pepper. Bring to a gentle simmer.
  • Add gnocchi to the pot and cook for 3-5 minutes or until the gnocchi floats to the top.
  • Stir in spinach and Parmesan cheese, cooking for another 2 minutes until spinach is wilted.
  • Taste and adjust seasoning if needed. Serve hot with extra Parmesan on top, if desired.

Notes

  • For a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the soup before adding the spinach.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
