- 2 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 po chicken breast, cooked and shredded
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup milk (whole or 2%)
- 1 tsp dried thyme
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 1 po gnocchi
- 2 cups fresh spinach, chopped
- ½ cup grated Parmesan cheese
Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté for 5 minutes until vegetables are softened.
Stir in shredded chicken, chicken broth, heavy cream, and milk. Add thyme, Italian seasoning, salt, and pepper. Bring to a gentle simmer.
Add gnocchi to the pot and cook for 3-5 minutes or until the gnocchi floats to the top.
Stir in spinach and Parmesan cheese, cooking for another 2 minutes until spinach is wilted.
Taste and adjust seasoning if needed. Serve hot with extra Parmesan on top, if desired.

For a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the soup before adding the spinach.
