- 1 cup heavy cream
- 2 large egg yolks
- ½ cup cooked crab meat
- 1 tbsp finely chopped shallots
- 1 tsp Dijon mustard
- ¼ tsp cayenne pepper
- Salt and pepper to taste
- 2 tbsp granulated sugar (for caramelization)
Preheat your oven to 325°F (160°C).In a medium saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat.In a mixing bowl, whisk together the egg yolks, mustard, cayenne pepper, salt, and pepper.Slowly add the hot cream to the egg mixture, whisking continuously to avoid curdling.Stir in the crab meat and shallots.Divide the mixture into four ramekins and place them in a baking dish.Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins.Bake for 30 minutes or until the custards are set.Remove from the oven and let cool to room temperature.Just before serving, sprinkle the sugar evenly over the top of each custard and caramelize with a kitchen torch or under a broiler until golden and crispy.
