Ingredients
  

  • 500g ground beef or chicken
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (400g) cream of mushroom soup or homemade
  • 1/2 cup sour cream or Greek yogurt
  • 1 teaspoon paprika
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt (to taste)
  • 1 teaspoon dried parsley or Italian herbs
  • 2 cups shredded cheese (cheddar or mozzarella)
  • 3 cups frozen hash browns or thinly sliced potatoes
  • 1 tablespoon freshly chopped parsley (for garnish)
  • 1 cup drained corn (canned or frozen)

Instructions
 

  • 1.Preheat oven to 375°F (190°C).
    2.Cook Beef: Brown ground beef with onion and bell pepper over medium heat (8 mins). Drain fat.
    3.Add Flavors: Stir in garlic, beans, corn, tomatoes, and seasonings. Simmer 5 mins.
    4.Assemble: Transfer mixture to 9x13" baking dish. Top with tater tots in even layer.
    5.Bake: 30 mins uncovered until tots are golden.
    6.Add Cheese: Sprinkle cheese, bake 5 more mins until melted.
    7.Garnish: Top with green onions before serving.

Notes

  • For extra heat, add jalapeños to beef mixture
  • Substitute ground turkey for lighter version
  • Can be assembled ahead and refrigerated overnight
