Preparation

  • In a large pot, heat the olive oil over medium heat until it shimmers, about 1-2 minutes.
  • Add the chopped onions, diced carrots, and celery; sauté for about 5 minutes until softened.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Pour in the vegetable broth and add the diced potatoes. Bring to a boil, then reduce the heat to low and simmer for about 15 minutes, or until the potatoes are fork-tender.
  • Add the chopped zucchini and diced bell pepper, cooking for an additional 5-7 minutes until just tender.
  • Stir in the heavy cream or coconut milk, then season generously with salt and pepper.
  • Serve hot, garnished with fresh herbs. Pair with crusty bread.

Notes

Store in an airtight container in the fridge for up to 3 days or freeze for up to 3 months. Reheat with a splash of broth if the texture becomes too thick.
