- 1 po cooked shrimp, peeled and deveined
- ½ po cooked crab meat
- 1 cup cooked calamari rings
- ½ cup diced celery
- ½ cup diced red bell pepper
- ¼ cup chopped red onion
- ½ cup mayonnaise
- 2 tbsp fresh lemon juice
- 1 tbsp olive oil
- 2 tbsp chopped fresh parsley
- Salt and pepper to taste
- Lettuce leaves for serving
In a large bowl, combine shrimp, crab meat, and calamari.Add celery, red bell pepper, and red onion.In a small bowl, whisk together mayonnaise, lemon juice, olive oil, parsley, salt, and pepper.Pour the dressing over the seafood mixture and toss gently to combine.Chill in the refrigerator for at least 1 hour before serving.Serve on a bed of lettuce leaves.
