  • 1/4 cup fresh cilantro, finely chopped Don’t skip on fresh herbs for that aromatic touch!
  • 1/2 medium red onion, finely diced For a milder flavor, soak them in cold water for 10 minutes.
  • 1 medium bell pepper, diced Use red or yellow for sweetness.
  • 1 medium avocado, diced Add until just before serving for a buttery texture.
  • 1 medium lime, juiced Fresh lime juice works wonders; bottled doesn’t cut it.
  • 2 tablespoons olive oil Extra virgin for the best quality.
  • Salt and pepper, to taste

Preparation

  • Start by draining and rinsing the chickpeas, and let them sit in a colander for a few minutes to reduce excess moisture.
  • In a large mixing bowl, combine chickpeas, chopped cilantro, diced red onion, and diced bell pepper to create the base.

Dressing

  • In a small bowl, whisk together the juice of one lime and olive oil. Add salt and pepper to taste.

Combine

  • Pour the dressing over your chickpea mixture and carefully toss it to combine, ensuring everything is evenly coated.
  • Use a gentle folding motion to avoid smashing the chickpeas.

Add Avocado

  • Just before serving, gently fold in the diced avocado.

Serve

  • Enjoy immediately, or allow the salad to sit for about 10-15 minutes for the flavors to meld.

Notes

Storage: Store leftovers in an airtight container in the fridge for up to 3 days. The flavors intensify over time, but avoid storing avocado for too long to keep its creaminess.
