Ingredients
  

  • cups powdered sugar
  • 2 tbsp unsalted butter, softened
  • ¼ tsp peppermint extract
  • 2 tbsp heavy cream (or milk)
  • cups semi-sweet chocolate chips
  • 1 tsp coconut oil (optional)

Instructions
 

  • Prepare the Filling:In a large bowl, mix powdered sugar, butter, peppermint extract, and heavy cream. Stir until a dough-like consistency forms.
    Shape the Patties: Roll the mixture into small balls, then flatten them into discs. Place them on a parchment-lined baking sheet.
    Freeze the Discs: Freeze the peppermint discs for 15 minutes until firm.
    Melt the Chocolate: Melt chocolate chips and coconut oil in a microwave or double boiler until smooth.
    Coat the Patties:Dip each peppermint disc into the melted chocolate, ensuring it’s fully coated. Let excess chocolate drip off.
    Set the Chocolate: Return the coated patties on the baking sheet and refrigerate for 10–15 minutes until the chocolate is set.
    Serve and Enjoy: Store the patties in an airtight container in the fridge or freezer.

  • For a festive touch, sprinkle crushed candy canes before the chocolate sets.
  • To make this vegan, use dairy-free chocolate and plant-based butter.
