Cake Batter:
- 1¾ cups (220g) all-purpose flour
- ¾ cup (65g) unsweetened cocoa powder
- 1½ tsp baking powder
- 1½ tsp baking soda
- 1 tsp salt
- 2 cups (400g) granulated sugar
- 2 large eggs
- 1 cup (240ml) whole milk
- ½ cup (120ml) vegetable oil
- 2 tsp vanilla extract
- 1 cup (240ml) boiling water
Optional Frosting:
- 1 cup (230g) butter, softened
- 3½ cups (420g) powdered sugar
- ½ cup (50g) cocoa powder
- ⅓ cup (80ml) heavy cream
- 1 tsp vanilla extract
Prep: Preheat oven to 350°F (175°C). Grease and flour two 9-inch round pans.Dry ingredients: Whisk flour, cocoa, baking powder, baking soda, and salt in a bowl.Wet ingredients: In another bowl, beat sugar, eggs, milk, oil, and vanilla until smooth.Combine: Gradually add dry ingredients to wet, mixing until just combined. Stir in boiling water (batter will be thin).Bake: Divide batter between pans. Bake 30–35 minutes until a toothpick comes out clean. Cool 10 minutes in pans, then transfer to a rack.Frosting: Beat all frosting ingredients until fluffy. Frost cooled cake layers.
