Ingredients
  

  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tbsp olive oil or butter
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime (about 2 tbsp)
  • 1 tsp lime zest
  • ½ tsp salt (or to taste)
  • ¼ tsp black pepper
  • ¼ tsp cumin (optional)
  • ¼ tsp chili powder (optional, for a hint of spice)

Instructions
 

  • Rinse the rice under cold water until the water runs clear.
    In a medium saucepan, combine the rinsed rice, water, and olive oil or butter. Bring to a boil.
    Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the water is absorbed.
    Remove the rice from heat and let it sit, covered, for 5 minutes.
    Fluff the rice with a fork, then gently fold in the chopped cilantro, lime juice, lime zest, salt, pepper, cumin, and chili powder (if using).
    Taste and adjust seasoning as needed. Serve warm.

Notes

  • For a stronger lime flavor, add more lime juice or zest.
  • Use brown rice for a healthier option, but adjust cooking time accordingly.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
