Ingredients
  

Chili Garlic Sauce

  • 10-12 red chilies (Thai or Fresno), stemmed
  • 8 garlic cloves
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt

Flavor Enhancers:

  • 1 tbsp fermented bean paste (optional)
  • ½ tsp smoked paprika
  • ¼ cup neutral oil

Instructions
 

  • Blend: Pulse chilies, garlic, vinegar, sugar, and salt until chunky.
    Cook: Heat oil, add paste. Fry 3-4 minutes until fragrant.
    Bottle: Cool and transfer to sterilized jar.

Notes

  • Heat Control: Remove seeds for milder sauce
  • Storage: Keeps 1 month refrigerated
  • Substitute: 2 tbsp chili flakes + 1 tsp garlic powder in pinch
