Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 3 large eggs
  • 1 cup breadcrumbs (Panko or regular)
  • ½ cup grated Parmesan cheese (optional)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup vegetable oil (for frying)
  • Lemon wedges (for serving)

Instructions

  • Step 1: Prepare the Chicken
Place the chicken breasts between two sheets of plastic wrap. Pound them with a meat mallet or rolling pin until they are about ¼ inch thick.
  • Step 2: Set Up the Breading Station
    Arrange three shallow bowls:
Bowl 1: Flour seasoned with salt and pepper.
    Bowl 2: Beaten eggs.
Bowl 3: Breadcrumbs mixed with Parmesan, garlic powder, and paprika.
  • Step 3: Bread the Chicken
Dip each chicken breast into the flour, shaking off excess. Then coat it in the egg mixture, followed by the breadcrumb mixture. Press lightly to ensure the coating adheres.
  • Step 4: Heat the Oil
In a large skillet, heat vegetable oil over medium-high heat. The oil should be hot but not smoking (about 350°F or 175°C).
  • Step 5: Fry the Schnitzels
Fry each piece of chicken for 3-4 minutes per side, or until golden brown and cooked through. Transfer to a plate lined with paper towels to drain excess oil.
  • Step 6: Serve and Enjoy
Serve hot with lemon wedges for an extra burst of flavor.

Notes

  • Ensure the chicken is evenly pounded for uniform cooking.
  • For a healthier version, bake the schnitzels at 400°F (200°C) for 15-20 minutes, flipping halfway.
  • Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C).
