- 2 cups cooked chicken breast, shredded or diced
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt (or more mayo)
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1/2 cup diced celery
- 1/4 cup diced red onion
- 1/4 cup chopped grapes or apples (optional)
- 2 tbsp chopped fresh parsley
- Salt & pepper to taste
In a large bowl, combine chicken, celery, red onion, and optional fruit (grapes/apples).In a small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, Dijon mustard, salt, and pepper.Pour the dressing over the chicken mixture and gently fold until well coated.Chill for at least 1 hour before serving for best flavor.Serve on bread, lettuce wraps, or with crackers.
