Ingredients
  

  • 2 cups cooked chicken breast, shredded or diced
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt (or more mayo)
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1/2 cup diced celery
  • 1/4 cup diced red onion
  • 1/4 cup chopped grapes or apples (optional)
  • 2 tbsp chopped fresh parsley
  • Salt & pepper to taste

Instructions
 

  • In a large bowl, combine chicken, celery, red onion, and optional fruit (grapes/apples).
    In a small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, Dijon mustard, salt, and pepper.
    Pour the dressing over the chicken mixture and gently fold until well coated.
    Chill for at least 1 hour before serving for best flavor.
    Serve on bread, lettuce wraps, or with crackers.

Notes

  • Use rotisserie chicken for a quick shortcut.
  • For a lighter version, substitute Greek yogurt for half the mayo.
