- 1 small yellow onion, chopped
- 3 cloves garlic, minced
- 1/2 tablespoon freshly grated ginger
- 1 pound ground chicken
- 3 tablespoons hoisin sauce
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon hot sauce (optional)
- 1 teaspoon toasted sesame oil
- 1/2 cup canned water chestnuts, chopped
- 2 scallions, chopped
- Salt and freshly ground black pepper to taste
- 1 head Bibb Lettuce, separated into individual leaves
1.Cook Chicken: Heat sesame oil over medium-high. Cook chicken until no longer pink (5-6 mins).2.Add Aromatics: Stir in garlic, ginger, water chestnuts, and green onions (2 mins).3.Make Sauce: Whisk sauce ingredients in bowl, then pour over chicken mixture. Simmer 2 mins.4.Assemble: Spoon 2 tbsp filling into each lettuce leaf. Garnish with cilantro and sesame seeds.
