Ingredients
  

  • 2 tablespoons olive oil
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 1/2 tablespoon freshly grated ginger
  • 1 pound ground chicken
  • 3 tablespoons hoisin sauce
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon hot sauce (optional)
  • 1 teaspoon toasted sesame oil
  • 1/2 cup canned water chestnuts, chopped
  • 2 scallions, chopped
  • Salt and freshly ground black pepper to taste
  • 1 head Bibb Lettuce, separated into individual leaves

Instructions
 

  • 1.Cook Chicken: Heat sesame oil over medium-high. Cook chicken until no longer pink (5-6 mins).
    2.Add Aromatics: Stir in garlic, ginger, water chestnuts, and green onions (2 mins).
    3.Make Sauce: Whisk sauce ingredients in bowl, then pour over chicken mixture. Simmer 2 mins.
    4.Assemble: Spoon 2 tbsp filling into each lettuce leaf. Garnish with cilantro and sesame seeds.

Notes

  • For crunch, add shredded carrots or jicama
  • Substitute ground turkey for chicken
  • Serve with lime wedges for extra freshness
