Ingredients
  

For the Bolognese

  • 2 slices slices of back bacon, fat removed and chopped
  • 3 pieces shallots, finely diced
  • 1 piece carrot, finely diced
  • 2 small stalks celery, finely diced
  • 3 cloves garlic, crushed
  • 400 g extra lean beef mince (ground beef) Can substitute with turkey or plant-based options.
  • ½ tablespoon dried mixed herbs A blend like Italian seasoning works beautifully.
  • 400 g chopped tomatoes, canned San Marzano is recommended for richer taste.
  • 3 tablespoons tomato paste Puree
  • 1 tablespoon balsamic vinegar Adds a touch of sweetness.
  • 1 teaspoon granulated sweetener or sugar Optional, balances acidity.
  • 240 ml chicken or beef stock Homemade if possible.

For the Bake

  • 500 g gnocchi Fresh or frozen.
  • 120 g mature cheddar, grated Go for a sharp flavor.
  • Olive oil cooking spray For frying.
  • Salt and black pepper To taste.
  • Few leaves fresh basil, torn For garnish.

Preparation

  • Spray a frying pan over medium-high heat with olive oil spray. Add the chopped bacon and fry until golden and crispy (about 3-4 minutes). Remove the bacon and set aside.
  • In the same pan, add shallots, carrot, and celery. Cook for about 5-6 minutes until softened, adding a splash of water or stock if veggies start to stick.

Cooking the Sauce

  • Add crushed garlic and ground beef to the pan. Brown the meat for about 5-7 minutes, breaking it up as it cooks.
  • Return the crispy bacon to the pan. Stir in dried mixed herbs, chopped tomatoes, and tomato paste. Add balsamic vinegar and sweetener (if using), along with the stock. Bring the mixture to a low boil, cover, and let it simmer for 20 minutes until the sauce thickens nicely.

Finishing the Bake

  • Stir in the gnocchi, simmering for an additional 5-8 minutes until cooked. Add more stock if the gnocchi absorbs too much liquid.
  • Season the sauce with salt and black pepper to taste. Transfer to a baking dish and spread evenly.
  • Top with grated cheddar and place under the broiler/grill for about 4 minutes until cheese is melted, bubbly, and lightly golden.
  • Garnish with fresh torn basil leaves and serve immediately.

Notes

This dish can be made ahead and stored. It can also be frozen for up to 3 months. Reheat in the oven for best results.
