Ingredients
  

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1 cup shredded cheese (Cheddar, Mozzarella, or your choice)
  • 1/2 cup milk
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • Optional: red pepper flakes or your favorite herbs for extra flavor

Instructions
 

  • 1.Preheat oven to 375°F (190°C). Grease 9x9" baking dish.
    2.Whisk Eggs: Beat eggs with milk and seasonings until uniform.
    3.Layer: Spread spinach in dish, pour egg mixture over, sprinkle cheeses.
    4.Bake: 18-20 minutes until center is set.
    5.Broil: 1-2 minutes for golden top (optional).
    6.Cool 5 minutes before slicing.

Notes

  • Add diced tomatoes or mushrooms for variation
  • For dairy-free, use nutritional yeast instead of cheese
  • Can be refrigerated for 3 days
