  • 1 ripe avocado, diced
  • ΒΌ cup cooked sushi rice (optional)
  • 2 tbsp mayonnaise
  • 1 tsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame seeds
  • 1 sheet nori, thinly sliced
  • 1 green onion, finely chopped
  • Salt to taste

Instructions
 

  • Prepare the Cucumber Base: Start by thinly slicing the cucumbers into rounds or half-moons. Place them in a large salad bowl.
    Mix the Dressing: In a small bowl, whisk together mayonnaise, soy sauce, rice vinegar, and sesame oil until smooth.
    Combine Ingredients: Add the shredded imitation crab meat, diced avocado, and optional sushi rice to the cucumber slices.
    Toss the Salad: Drizzle the dressing over the salad ingredients and toss gently to combine, ensuring everything is evenly coated.
    Add Toppings: Sprinkle sesame seeds, sliced nori, and chopped green onion over the salad.
    Season and Serve: Add salt to taste, give it a final toss, and serve immediately.

  • For an extra burst of flavor, consider adding a splash of lemon juice.
