Ingredients
  

Cajun Chicken

  • 4 boneless, skinless chicken breasts (~6 oz each)
  • 2 tbsp olive oil
  • 2 tbsp homemade Cajun seasoning (recipe below)

Cajun Seasoning (Mix Together)

  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • ½ tsp cayenne pepper (adjust for heat)
  • ½ tsp black pepper
  • ½ tsp salt

Sandwich Assembly

  • 4 brioche or ciabatta buns, toasted
  • 1 cup shredded lettuce
  • 1 tomato, sliced
  • ¼ cup pickled jalapeños (optional)

Chipotle Mayo

  • ½ cup mayonnaise
  • 1 tbsp lime juice
  • 1 tsp chipotle powder (or 1 canned chipotle in adobo, minced)
  • ½ tsp garlic powder

Instructions
 

  • Prep Chicken:
    Pound chicken to even thickness (½-inch).
    Rub with olive oil, then coat evenly with Cajun seasoning.
    Cook Chicken:
    Grill or pan-sear over medium-high heat for 5-6 minutes per side, until internal temp reaches 165°F (74°C).
    Make Chipotle Mayo:
    Mix mayo, lime juice, chipotle, and garlic powder.
    Assemble Sandwiches:
    Spread chipotle mayo on buns.
    Layer chicken, lettuce, tomato, and jalapeños.

  • For extra juicy chicken: Brine in saltwater for 30 minutes before seasoning.
  • Gluten-free option: Use GF buns or serve as a salad.
