Ingredients
  

  • 2 lbs small potatoes (Yukon Gold or baby potatoes work best)
  • 4 tbsp unsalted butter, melted
  • 2 tbsp fresh thyme leaves (or 1 tbsp dried thyme)
  • Salt and pepper to taste
  • 2 tbsp olive oil (optional, for extra crispiness)
  • garlic cloves (2-3, smashed) for added flavor Optional

Instructions
 

  • Preheat the Oven
    Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Prepare the Potatoes
    Wash and dry the potatoes thoroughly. Cut them into halves or quarters, depending on their size, to ensure even cooking.
  • Season the Potatoes
    In a large mixing bowl, combine the melted butter, olive oil (if using), thyme, salt, and pepper. Add the potatoes and toss until they are evenly coated.
  • Arrange and Roast
    Spread the potatoes in a single layer on the prepared baking sheet, cut side down for maximum crispiness. Roast in the preheated oven for 40-45 minutes, or until golden and crispy. Flip halfway through to ensure even browning.
  • Serve and Enjoy
    Serve warm, garnished with a few extra sprigs of fresh thyme if desired.

Notes

You can add garlic for an additional layer of flavor. Simply smash a few cloves and add them to the baking sheet along with the potatoes.
