Instructions
Preheat the OvenPreheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Prepare the PotatoesWash and dry the potatoes thoroughly. Cut them into halves or quarters, depending on their size, to ensure even cooking.
Season the PotatoesIn a large mixing bowl, combine the melted butter, olive oil (if using), thyme, salt, and pepper. Add the potatoes and toss until they are evenly coated.
Arrange and RoastSpread the potatoes in a single layer on the prepared baking sheet, cut side down for maximum crispiness. Roast in the preheated oven for 40-45 minutes, or until golden and crispy. Flip halfway through to ensure even browning.
Serve and EnjoyServe warm, garnished with a few extra sprigs of fresh thyme if desired.
Notes
You can add garlic for an additional layer of flavor. Simply smash a few cloves and add them to the baking sheet along with the potatoes.
