Ingredients
  

  • 4 medium flour tortillas
  • 4 large eggs, scrambled
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • ¼ cup diced bell peppers
  • ¼ cup diced onions
  • 2 tbsp chopped cilantro
  • 2 oz cooked breakfast sausage or bacon (optional)
  • 1 tbsp butter or oil
  • Salt & pepper to taste
  • Salsa/sour cream for serving

Instructions
 

  • Cook onions and peppers in skillet until soft (2-3 mins), then add scrambled eggs.
    Layer cheese, egg mixture, and meat (if using) between two tortillas.
    Melt butter in clean skillet over medium heat.
    Cook quesadilla 2-3 minutes per side until golden and cheese melts.
    Slice and serve with toppings.

Notes

  • Substitutions: Use whole wheat tortillas or egg whites for healthier version
  • Vegetarian: Omit meat, add black beans
  • Storage: Reheats well in air fryer or toaster oven
