Marinade:
- 1½ lbs (680g) boneless chicken thighs, cubed
- ¾ cup BBQ sauce
- 2 tbsp olive oil
- 2 tbsp soy sauce
- 1 tbsp honey
- 2 garlic cloves, minced
- 1 tsp smoked paprika
Skewers:
- 1 bell pepper (any color), cut into chunks
- 1 red onion, cut into chunks
- 8 wooden/metal skewers
Soak wooden skewers 30 mins (if using).Whisk marinade ingredients. Reserve ¼ cup.Toss chicken in marinade, refrigerate 1-24 hours.Thread chicken and veggies alternately onto skewers.Grill over medium-high heat 10-12 mins, turning and basting with reserved sauce.Serve with extra BBQ sauce.
