Ingredients
  

Marinade:

  • 1½ lbs (680g) boneless chicken thighs, cubed
  • ¾ cup BBQ sauce
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 2 garlic cloves, minced
  • 1 tsp smoked paprika

Skewers:

  • 1 bell pepper (any color), cut into chunks
  • 1 red onion, cut into chunks
  • 8 wooden/metal skewers

Instructions
 

  • Soak wooden skewers 30 mins (if using).
    Whisk marinade ingredients. Reserve ¼ cup.
    Toss chicken in marinade, refrigerate 1-24 hours.
    Thread chicken and veggies alternately onto skewers.
    Grill over medium-high heat 10-12 mins, turning and basting with reserved sauce.
    Serve with extra BBQ sauce.

  • Shortcut: Use pre-cut chicken and bottled sauce
  • Oven Option: Broil 6-8 mins per side
