Ingredients
  

  • 4 medium potatoes (peeled and cubed)
  • 3 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 2 fresh red chilies (finely chopped, adjust to taste)
  • ½ cup fresh cilantro (chopped)
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • Salt to taste
  • 1 tablespoon lemon juice

Instructions
 

  • Prep the Potatoes: Peel and cube the potatoes into bite-sized pieces. Rinse them under cold water to remove excess starch, then pat dry.
    Cook the Potatoes: Heat 2 tablespoons of olive oil in a pan over medium heat. Add the potatoes and cook until golden and crispy, stirring occasionally (about 15-20 minutes).
    Prepare the Spice Mix: In a separate small pan, heat the remaining olive oil. Add minced garlic, chopped chilies, paprika, and cumin. Sauté for 1-2 minutes until fragrant.
    Combine: Add the cooked potatoes to the spice mix and toss to coat evenly. Stir in the chopped cilantro and lemon juice.
    Serve: Transfer to a serving dish and garnish with extra cilantro if desired. Serve warm.

Notes

  • Adjust the amount of chili to suit your spice preference.
  • For extra crispiness, you can parboil the potatoes before frying.
