- 1 cup buttermilk
- 1 large egg
- 2 tbsp unsalted butter, melted
- 2 ripe bananas, sliced
- ¼ cup unsalted butter
- ½ cup brown sugar
- ½ tsp ground cinnamon
- ½ cup rum (optional)
- ½ tsp vanilla extract
- Whipped cream or ice cream (optional, for serving)
Prepare the pancake batter: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, mix buttermilk, egg, and melted butter. Combine wet and dry ingredients until just mixed (small lumps are okay).Cook the pancakes: Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown. Repeat for all pancakes.Make the Bananas Foster topping: In a separate skillet, melt butter over medium heat. Add brown sugar and cinnamon, stirring until dissolved. Add banana slices and cook for 2-3 minutes until softened.Add the rum (optional): Carefully pour in the rum and let it simmer for 1-2 minutes. If desired, flambé by igniting the alcohol (use caution). Stir in vanilla extract.Assemble: Stack the pancakes on a plate and top with the Bananas Foster sauce.
